Ability to limit People Picker detail displayed after selecting a person

Currently, the Rock:PeoplePicker UI control shows more detail than is necessary for most users to have after they make a selection by clicking the radio button:

In 99% of cases, our users just need to see firstname, lastname, email and maybe spouse. Everything else is usually over-sharing.

We noted that Rock:PeoplePicker has a property called 'includeDetails' which is recognised by REST controllers and can be set to 'false', but has no effect at all on what is displayed. Could this be brought to life perhaps?
